2 lbs. beef or turkey 1 small can enchilada sauce, mild
1 can cream of chicken soup 1/4 c. picante sauce
1 can cream of mushroom soup floor tortillas
1 can chopped chilies, drained Velveeta cheese
1/4 c. milk
Brown meat and drain. Mix together drain meat, soups, chilies, milk, enchilada sauce, and picante sauce. Spray baking dish & then cover with flour tortillas. Pour half of meat mixture cover with tortillas, then add a layer of Velveeta cheese. Repeat layers, tortillas, meat mxture then Velveeta. Bake in oven on 350 until chesse melts, about 15 minutes. Yummy!
I use turkey meat.

Beef, Rice & Broccoli Casserole
2 lbs. ground beef or turkey 2 (10 oz.) pkgs. frozen broccoli
1 medium onion ( or Tbsp. onion flakes) 1 can cream of cerery soup
2 c. Minute Rice 1 small jar Cheez Whiz (plain)
2 c. water salt & pepper to taste
Cook ground beef or turkey with onion or onion flakes until meat is done. Drain off grease. Cook rice with water (as directed on box). Cook broccoli bits as directed on package. Drain juice from. Put all in large mixing bowl and add cream of celery soup, Cheez Whiz. Add salt & pepper to taste.
Can be make ahead of time and frozen.
